Make small balls out of the mixture and set aside.  Heat oil and cook meatballs until golden brown. Add Thai sweet chilli sauce at the end and coat the balls until sticky. Top with spring onion, crushed peanuts and coriander. Serve with Noodles     Pistachio lemon cookies : Ingredients Flour    1-3/4 cup  Baking powder  1 tsp  Salt   ½ tsp  butter    ½ cup  Sugar   ½ cup  Honey   1/3 cup  Hung curd   3 tbsp Lemon zest  1 tsp  Lemon juice or essence 1 tbsp  Pistachios chopped ¼ cup  Icing sugar  for dusting  Method: Sift the flour, salt and baking powder in a bowl.  Beat butter and sugar until fluffy. Add in yogurt and the honey, lemon zest and lemon essence or juice. Stir in the flour mixture and pistachios. Shape the dough into logs, wrap in a clingfilm and refrigerate it for a couple of hours until firm. Once the cookie dough is firm, slice into 1-inch sizes pieces and place on silicon lined baking trays. Bake at 180 degrees c for about 12 minutes until golden brown.  Allow to cool completely.  Dust over icing sugar and serve.'
